We like to make the tomato sauce for pizza with garlic, onions, herbs, red wine, and much more. But none of these ingredients actually belong in the classic Italian tomato sauce, as in Naples.

Which tomatoes are the right ones?

In principle, of course, you could conjure up a sauce from every tomato, but there is only one variety that is also used in the original from Naples.

The special thing about this variety is that it is harvested fully ripe and has a very intense and fruity aroma with little water and few seeds.

The cultivation area of the so-called bottle tomato at the foot of Mount Vesuvius on fertile volcanic soil and close to the sea is responsible for its unique aroma.

Fortunately, this type of tomato cannot be processed industrially because it is much too tender for it. On the one hand, this is the reason why they are relatively expensive, and on the other hand, that is exactly what makes them top quality.

If you don’t want to buy these tomatoes, you should still pay attention to a few details when buying another tomato variety.

What should I pay attention to when buying canned tomatoes?

I have a few tips and tricks for you about what to look for when buying canned tomatoes for the pizza sauce if you don’t want to use San Marzano.

  • Ingredient list carefully read

Canned tomatoes only the peeled tomatoes and tomato juice are. When the tomatoes are chemically skinned with lye, citric acid has to be added to neutralize them again. However, this makes the tomatoes acidic, so it is better to avoid products that contain citric acid.

  • The number on the bottom of the can indicates the degree of ripeness

. Because only fully ripened tomatoes have the full taste and pleasant sweetness. A number combination is printed on the bottom of the can. This consists of 1 – 2 letters and 3 numbers.

The numbers indicate the day of the year the tomatoes were harvested.

Example: S220 means that the tomatoes were harvested on the 220th day of the year, which would be August 7th in 2020. All numbers between 190 and 250 are perfect, because then the tomato was harvested fully ripe. You’d better leave all other numbers on the shelf.

  • Pay attention to the origin of tomatoes

China is now the largest producer worldwide with over 50 million tons of tomatoes grown each year. In comparison: Italy only grows 6 million tons. Therefore, when buying canned tomatoes, make absolutely sure where they come from.

Protected designations of origin and information such as “100% tomatoes from Italy” help us to make the right decision. However, the manufacturers are pretty smart these days.

Note: The origin of processed tomatoes does not have to be specified. So you can buy ready-made Italian pizza with tomato sauce, but that doesn’t mean that the tomatoes also come from Italy.

In principle, you could say that whoever buys the cheapest tomatoes also gets the cheapest quality.

Make tomato sauce for pizza yourself

Now that we know everything about the basic ingredients of our original Italian pizza sauce, we can start cooking. You only need a blender in addition to a bowl. This tomato sauce for pizza is based on the original from Naples. You only need 3 ingredients to prepare the Italian pizza sauce, which is the best I’ve ever eaten.

You need for this recipe

  • Blender


  • 1 can of San Marzano tomatoes
  • Sea-salt
  • 2-3 basil leaves


  1. Put the canned tomatoes in a bowl. Season with a good pinch of sea salt and add the basil leaves.
  2. Briefly mix each tomato with the hand blender and then briefly swirl two three rounds in the bowl. In no case puree for too long, it may still contain small pieces.
  3. And our pizza sauce is ready.

The amount is enough for 4 – 5 pizzas or 1.5 – 2 trays.
